Ginger cake bread and butter pudding Recipe

  • butter, for greasing
  • 1 slice ready-made ginger cake
  • 4-6 tbsp ready-made custard
  • icing sugar, to dust
  • fresh mint sprig, to garnish
  1. Preheat the oven to 200C/400F/Gas 6. Lightly grease a ramekin.
  2. Slice the cake into smaller pieces and place into the base of the ramekin.
  3. Pour over enough custard to fill the ramekin.
  4. Place the ramekin into the oven and bake for 6-8 minutes, or until warmed through.
  5. To serve, dust the pudding with icing sugar and garnish with a sprig of mint.
