- 6 potatoes, peeled and cubed
- 1 pound fresh green beans, washed and trimmed
- 3/4 cup olive oil
- 12 cloves garlic, halved
- 1 onion, chopped
- 1 pound fettuccini pasta
- 1/2 cup butter
- salt and pepper to taste
- 1 cup grated Parmesan cheese
- Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender. Be careful to not overcook. Drain, and set aside. Meanwhile, steam string beans for 10 to 12 minutes, or until tender but still crisp. Set aside.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain.
- In a heavy skillet, heat oil over medium low heat and add garlic and onion. Saute until golden and crisp. Add butter, and heat until melted.
- Add potatoes, green beans, Parmesan, and the garlic and onion mixture to pasta, and gently toss. Season with salt and pepper.
