Garlic-Pesto Chicken Recipe

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, cut in bite-sized pieces
  • 1 (16 ounce) package mixed vegetables
  • 1/2 tablespoon garlic, minced
  • 1 teaspoon salt
  • 3 ounces pesto sauce
  • 2 cups cooked pasta
  • 2 tablespoons Parmesan cheese
  1. Heat the oil in a large non-stick skillet. Cook the chicken thoroughly over medium-high heat. Add the vegetables, garlic, and salt, and cook for 5 minutes. Reduce heat; simmer for 5 minutes. Add the pesto sauce.
  2. Serve over cooked pasta; add Parmesan cheese.
