- 1 pound boneless, skinless chicken breast, cut in bite-sized pieces
- 1 (16 ounce) package mixed vegetables
- 1/2 tablespoon garlic, minced
- 1 teaspoon salt
- 3 ounces pesto sauce
- 2 cups cooked pasta
- 2 tablespoons Parmesan cheese
- Heat the oil in a large non-stick skillet. Cook the chicken thoroughly over medium-high heat. Add the vegetables, garlic, and salt, and cook for 5 minutes. Reduce heat; simmer for 5 minutes. Add the pesto sauce.
- Serve over cooked pasta; add Parmesan cheese.
