Gardenia Pie Recipe
- 1 cup white sugar
- 1/4 teaspoon salt
- 2 eggs
- 2 tablespoons distilled white vinegar
- 1 tablespoon unsalted butter, melted
- 1/2 cup chopped pecans
- 1/2 cup golden raisins
- 1/2 cup flaked coconut
- 1 (9 inch) pie shell
- Preheat oven to 325 degrees F (175 degrees C).
- In a large bowl, combine sugar, salt, eggs, vinegar and melted butter. Beat well. Fold in pecans, raisins and coconut.
- Pour into unbaked pie shell. Bake on lower rack in oven at 325 degrees F (165 degrees C) for 30 minutes. Top should brown lightly.
- Store in refrigerator.
