- 1/2 cup canola oil
- 1/4 cup liquid honey
- 1/4 cup lemon juice
- 1 tablespoon chopped chives
- 1/2 teaspoon crushed basil (dill, thyme or mint can also be used)
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 16 cups mixed chunks of fruit (strawberries, melon, banana, grapes, oranges, etc.)
- 8 cups spring greens or mesclun mix
- 1/2 cup raw sunflower seeds
- In a jar with a tight fitting lid combine oil, honey, lemon juice, chives, basil, paprika and salt; shake well.
- In a bowl toss together fruit, greens and 1 tablespoon dressing per person.
- Divide into individual salad plates or bowls. Sprinkle each with sunflower seeds.
