- 1 pound fresh spinach, torn
- 4 cups strawberries, sliced
- 1 (11 ounce) can mandarin oranges, drained
- 1 star fruit, sliced
- GINGER SALAD DRESSING:
- 1/3 cup lemon juice
- 2 tablespoons olive or canola oil
- 2 tablespoons sugar
- 3/4 teaspoon ground ginger
- 2 teaspoons grated lemon peel
- Arrange spinach and fruit on salad plates. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salads; serve immediately.
