Fresh Tuna Salad Recipe
							
										
						
				
- 2 tablespoons olive oil
 
- 2 fresh tuna steaks (about 8 ounces each)
 
- 1/2 cup finely diced celery
 
- 1/2 cup finely diced unpeeled Granny Smith apple
 
- 2 scallions, thinly sliced
 
- 1/2 cup mayonnaise
 
- 3 tablespoons finely slivered fresh basil leaves
 
- 4 good inner radicchio leaves, for serving cups
 
- Toasted peasant bread
 
- Heat the oil in a large, nonstick skillet over medium-high heat. Sear the tuna on the first side for 5 minutes, until lightly browned. Turn with a spatula and sear for 3 minutes longer or until cooked to your preference. Let the tuna rest for 5 minutes.
 
- Flake the tuna into 1×1/2-inch pieces and remove to a large bowl. Toss gently with the celery, apple, and scallions. Season with salt.
 
- Fold mayonnaise and basil into the tuna. Serve in radicchio cups with toasted peasant bread.
