- 1 cup fresh carrot juice
- 2 teaspoons cornstarch
- 2 tablespoons Safeway SELECT Red Wine Vinegar
- 1 teaspoon minced bottled green peppercorns
- 1/2 teaspoon minced fresh tarragon
- 1/4 teaspoon salt
- In a saucepan, stir carrot juice and cornstarch over high heat until bubbling; let cool (to speed cooling, set pan in a bowl of ice water). Add vinegar, peppercorns, tarragon, and salt. Use, or chill airtight up to 2 days.
