Fresh Apricot Salsa Recipe

  • 1 jalapeno pepper, stem removed
  • 3 cloves garlic, or to taste
  • 8 fresh apricots, pitted
  • 1 teaspoon brown sugar
  • 1 lime, juiced and zested
  • salt to taste
  1. Pulse jalapeno pepper and garlic in a food processor until coarsely chopped. Add apricots, brown sugar, lime juice, lime zest, and salt; pulse until chopped and salsa is just combined.
  2. Spoon salsa into serving bowl, cover with plastic wrap, and chill for 1 hour.
