Foil-Baked Salmon Recipe
- 1 (1 1/2-pound) salmon fillet
- 4 tablespoons olive oil, divided
- salt
- freshly ground black pepper
- 3 plum tomatoes, seeded and diced
- 4 green onions, thinly sliced
- 2 tablespoons minced fresh dill
- 1 lemon's peel, finely diced
- 2 tablespoons fresh lemon juice
- Preheat oven to 450 degrees F (230 degrees C).
- Place salmon on large piece of foil; brush with 2 tablespoons of oil and sprinkle with salt and pepper. Mix remaining oil with tomatoes, green onions, dill, lemon peel and lemon juice.
- Pour oil mixture over salmon, seal foil and bake until cooked through, about 20 minutes.
