- 1 cup wild rice
- 1 cup long-grain brown rice
- 3 3/4 cups So Delicious® Dairy Free Original Coconut Milk
- 1 cup dried cranberries
- 1 pear, diced
- 1/2 cup chopped pecans (optional)
- Rinse wild rice in cold water and drain thoroughly. Place wild rice and brown rice in a large saucepan with the coconut milk, and bring to a boil. Reduce heat and simmer until rice is tender and milk is absorbed, about 45 minutes. Transfer to a large bowl and fold in cranberries, pear, and nuts (if using).
