- 1 medium cucumber, peeled and chopped
- 2 medium tomatoes, chopped, or 1 cup grape tomatoes, halved
- 1 red onion, chopped
- 2 green Serrano chilies, minced
- ¼ -inch piece peeled ginger, minced
- 2 tablespoons cilantro, chopped
- 1 lime
- ½ teaspoon sugar
- 1 teaspoon black salt or to taste
- 1 teaspoon freshly ground black pepper
- ¼ teaspoon freshly ground cumin seeds
- 1 tablespoon crushed peanuts (optional)
- Place the cucumber, tomatoes, and onion in a large bowl.
- Add the minced green Serrano chilies, ginger, and cilantro and toss.
- Cut the lime in half and squeeze the lime juice over the tomato mixture. Mix in the sugar, black salt, black pepper, cumin, and crushed peanuts (if using).
- Chill for at least 20 minutes prior to serving to let the flavors settle.
