Eggplant Mediterranean Style Recipe

  • 2 small eggplants, both ends trimmed (about 1 pound)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon ground ginger
  • 1 tablespoon garlic powder
  • 1 teaspoon coriander
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon ground thyme
  • ¼ teaspoon ground oregano
  1. Cut eggplant slices lengthwise and arrange on baking sheet. Mix all the spices together. On both sides of the eggplant slices, brush olive oil, season with salt, and sprinkle the prepared spices. Preheat the broiler or barbecue. Broil or grill until golden brown, about 2 minutes per side.
