- 1 egg, lightly beaten
- 55g/2oz plain flour
- a little milk to taste
- 2 slices ham, 1cm/0.5in thick
- 2-3 tbsp olive oil
- 2 large mushrooms
- 2-3 tbsp parmesan, grated
- 1 tbsp honey
- handful of rocket
- salt and freshly ground black pepper
- Make a batter by beating the egg with the flour. Add a little milk if it is too thick.
- Dip the ham in the batter.
- Pan-fry the ham in the oil for one to two minutes either side until crisp.
- Remove the stems from the mushrooms.
- Stuff the mushrooms with the parmesan and drizzle with honey.
- Bake in a hot oven for five to six minutes.
- Season and serve the mushroom and ham on a bed of rocket.
