- 5 ounces lean ground round beef
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/2 jalapeno pepper
- 1/4 teaspoon cumin
- 1/2 cup canned kidney beans, rinsed and drained
- 1/2 cup vegetable broth
- 1/3 cup low sodium salsa
- 2 tablespoons fresh cilantro (coriander)
- Dice jalapeno and chop cilantro; set aside. In a medium sized pot over medium heat, cook ground beef, chopped onion, both peppers and cumin, stirring occasionally, until beef is no longer pink, about 8 to 10 minutes. Add beans, broth and salsa; reduce heat to a simmer and cook for about 10 to 15 minutes. Serve topped with chopped cilantro.
