eDiets Low Carb Shrimp and Veggie Toss Recipe

  • 6 ounces frozen, pre-cooked medium-sized shrimp
  • 4 cherry tomatoes
  • 2 cups mixed salad greens
  • 1 cup chopped or sliced cucumber
  • 2 tablespoons salad dressing, low fat or nonfat; low sodium
  1. Defrost shrimp and set aside. Rinse and halve the tomatoes. In a salad bowl, combine vegetables with shrimp and toss thoroughly with dressing. Serve.
