Easy Vegetable Rice Medley Recipe

  • 1 tablespoon canola oil
  • 1 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/2 cup chopped red peppers
  • 1 (14.5 ounce) can fat-free reduced-sodium chicken broth
  • 1 1/2 cups MINUTE White Rice, uncooked
  • 1 cup frozen peas
  1. Heat oil in skillet. Add onion, carrot, celery and pepper; cook 5 min. or until tender.
  2. Add broth; bring to boil.
  3. Stir rice and peas; cover. Simmer 5 min. Remove from heat. Let stand 5 min. before serving.
