Easy Potato Salad Recipe
- 6 medium unpeeled red potatoes, cubed
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon favorite flavor mustard
- 2 teaspoons salt
- 1/8 teaspoon pepper
- 1/4 cup chopped celery
- 1/4 cup chopped onions
- Place potatoes and 1/4 cup water in a shallow microwavable dish. Cover tightly and microwave on High 12 to 14 minutes, stirring once, or until potatoes are tender.
- Meanwhile, mix mayonnaise, sour cream, mustard, salt and pepper in large bowl. Add celery, onions and warm potatoes; toss gently.
- Cover and refrigerate at least 1 hour or until serving time.
