Easy Peasy Pasta Recipe
- 1 box whole wheat pasta
- 1 large Spanish onion, finely chopped
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, minced
- 2 large tomatoes, cored, seeded, and chopped
- 1 tablespoon chopped fresh herbs
- 1 pinch Salt and pepper to taste
- 1 cup fresh peas, shelled
- 1/3 pound fresh mozzarella cheese
- Boil pasta for 10 minutes. Drain.
- Saute onions in oil in a large saucepan over medium heat until translucent, about 10 minutes. Add garlic and saute another 2 minutes.
- Stir in tomatoes, herbs, salt, pepper, and 1/4 cup water. Cook uncovered for 20 minutes.
- Add peas and pasta to sauce. Let simmer for 15 minutes.
- Serve with sliced mozzarella.
