Easy Meatball Minestrone Recipe

  • 4 (14 ounce) cans lower sodium beef broth
  • 1 (16 ounce) package frozen mixed vegetables
  • 1 (12 ounce) package frozen cooked meatballs
  • 1 (15 ounce) can small white beans, drained, rinsed
  • 1 (14.5 ounce) can Hunt’s® Diced Tomatoes with Green Pepper, Celery & Onions, undrained
  • 1/4 cup Hunt's® Tomato Sauce-No Salt Added
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup small shell pasta
  • shredded Parmesan cheese (optional)
  1. Combine broth, vegetables, meatballs, beans, tomatoes with their liquid, tomato paste, Italian seasoning, salt and pepper in large saucepan or Dutch oven.
  2. Bring to a boil over high heat. Reduce heat to medium-high; add pasta. Cook for 15 minutes, stirring occasionally, or until pasta is tender. Garnish with cheese, if desired.
