- 3/4 teaspoon fresh ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon coarse salt
- 1 pound boneless leg of lamb
- 1/2 teaspoon extra virgin olive oil
- 8 slices seeded bread
- 4 teaspoons garlic spread
- 1 cup red onion slivers
- 2 plum tomatoes, chopped
- 2 cups spinach leaves
- Preheat oven to 400 degrees. Remove all visible fat from lamb.
- Mix black pepper, cayenne, garlic, and salt. Rub lamb with oil until it's covered, then with pepper mixture.
- Place in a baking dish just large enough to hold meat and roast 30 to 40 minutes or until pink inside.
- Use thinly sliced lamb and remaining ingredients to make four sandwiches.
