Dont Feel B-a-a-a-d Lamb Sandwich Recipe

  • 3/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon coarse salt
  • 1 pound boneless leg of lamb
  • 1/2 teaspoon extra virgin olive oil
  • 8 slices seeded bread
  • 4 teaspoons garlic spread
  • 1 cup red onion slivers
  • 2 plum tomatoes, chopped
  • 2 cups spinach leaves
  1. Preheat oven to 400 degrees. Remove all visible fat from lamb.
  2. Mix black pepper, cayenne, garlic, and salt. Rub lamb with oil until it's covered, then with pepper mixture.
  3. Place in a baking dish just large enough to hold meat and roast 30 to 40 minutes or until pink inside.
  4. Use thinly sliced lamb and remaining ingredients to make four sandwiches.
