- 225g/8oz sirloin steak
- 2 tbsp olive oil
- salt and freshly ground black pepper
- 2 slices bread
- ½ red onion, sliced into rings
- 4 tbsp vegetable oil
- salt and freshly ground black pepper
- 5 tbsp white wine
- 75g/2žoz Stilton cheese
- 2 tbsp double cream
- To make the steak sandwich, rub one tablespoon olive oil onto the steak and season with salt and freshly ground black pepper.
- In a hot griddle pan, cook the steak for 3-4 minutes.
- Rest the meat for two minutes and cut in half.
- Rub the remaining one tablespoon oil on to the bread, and toast on the griddle pan.
- For the onion rings, toss the onion slices with the oil and salt and freshly ground black pepper in a bowl.
- Place onto the griddle pan for 5-6 minutes till golden and soft.
- To make the Stilton sauce, in a small saucepan add the wine and reduce until half. Add the cheese until melted and then finish off the sauce by adding the double cream.
- To serve, make the sandwich by placing the steak onto the toasted bread. Pile with onions, top with the other toasted bread and drizzle with Stilton.
