- 1 cup cashew halves
- 1 cup canned cream of coconut
- 1 teaspoon vanilla extract
- 3 tablespoons maple syrup
- 1/2 cup soy milk
- In the container of a blender, combine the cashews, cream of coconut, vanilla, maple syrup and soy milk. Blend until smooth and thick. Transfer to a container and store in the refrigerator. It will thicken even more after a while.
