- 3 cups cooked turkey breast, cubed
- 1 cup jicama, diced
- 3 scallions, minced
- 3 stalks celery, minced
- 1/4 cup walnuts, chopped
- Dressing:
- 2/3 cup mayonnaise
- 2 teaspoons vinegar
- 2 teaspoons curry powder
- 1 teaspoon Splenda®
- salt and pepper to taste
- Cube the turkey and dice the jicama. Mince the celery and scallions. In a bowl toss together the turkey, jicama, celery, scallions and chopped walnuts.
- In a small bowl, whisk together the mayonnaise, vinegar, curry powder, Splenda and slat and pepper to taste. Add enough to the turkey mixture to coat. You may have some dressing left over depending on tastes.
