Cucumber-Mango Raita Recipe

  • 2 medium cucumbers, peeled, seeded and grated
  • 1 medium mango, peeled and chopped
  • 2 tbsp freshly chopped mint 30 mL
  • 2 tbsp freshly chopped cilantro 30 mL
  • 2 cups plain Greek yogurt 500 mL
  • ½ tsp kosher salt 2 mL
  1. In a large bowl, combine cucumber, mango, mint and cilantro. Stir in yogurt and salt and mix well. Use immediately or cover and refrigerate for up to 2 days.
