Crushed truffle potatoes Recipe

  • 150g/5½oz new potatoes
  • salt and freshly ground black pepper
  • ½ tbsp olive oil
  • 1 tbsp butter
  • ½ tsp chopped truffle (from a jar)
  • sprig fresh basil, to garnish
  1. Boil the potatoes in salted water for 12-15 minutes, or until tender. Drain and season with salt and freshly ground black pepper.
  2. Add the olive oil and butter and lightly crush with a fork or potato masher. Stir in the chopped truffle.
  3. To serve, place onto a serving plate with a sprig of basil, to garnish.
