Crushed Cornish potatoes Recipe

  • 400g/14oz Cornish new potatoes (if you cannot get Cornish use Jersey)
  • 2L/3½pt water to cover
  • 2 heads of garlic, cut in half
  • 2 large bay leaves
  • 20 sprigs of thyme
  • 1 tsp chicken bouillon
  • 40g/1½oz salt
  • 100g/3½ unsalted butter
  • salt and pepper
  1. Scrub and wash the new potatoes and place into a saucepan.
  2. Cover with the water and then add the rest of the ingredients, except the butter and final seasoning.
  3. Bring to the boil and reduce to a simmer.
  4. Cook for approximately 20 minutes.
  5. Once cooked, drain and using a fork or a potato masher, crush the potatoes lightly, add the butter and season with salt and pepper.
