- 150g/5½oz goats' cheese, sliced into four rounds
- ½ onion, finely sliced
- 1 tomato, chopped
- 1 small handful fresh coriander, chopped
- 2 tbsp olive oil
- salt and freshly ground black pepper
- Preheat the grill to its highest setting. When hot, place the cheese slices onto a baking tray and grill for 1-2 minutes on each side, or until golden-brown and crisp on both sides.
- Mix the onion, tomato and coriander together in a bowl, drizzle over the olive oil and season with salt and freshly ground black pepper. Mix well to coat in the oil.
- To serve, place the salad in the middle of a serving plate and arrange the crisp goats' cheese rounds on top.
