Creamy Zucchini Hummus Recipe

  • 2 small zucchini, peeled and cut into chunks
  • 2 tablespoons lemon juice
  • 1 tablespoon tahini
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 pinch ground cumin
  • 1 pinch paprika
  1. Blend zucchini, lemon juice, tahini, garlic, and salt in a blender until creamy. Stream olive oil into the hummus while blending until completely incorporated. Continue blending until smooth, 1 to 2 minutes. Transfer to a serving bowl; sprinkle cumin and paprika over the hummus.
