Creamy coconut rice pudding Recipe

  • 200ml/7fl oz double cream, plus extra for drizzling
  • 100ml/3½fl oz boiling water
  • 4 tbsp fresh coconut milk
  • 200g/7oz basmati rice
  • 3 tbsp caster sugar
  • 2 tbsp grated fresh coconut
  1. Place all of the ingredients except the grated coconut into a pan and bring to a simmer. Cook for 10-12 minutes, or until the rice is tender, adding more water as necessary.
  2. Just before serving, stir in the grated coconut and serve in a bowl with a drizzle of cream.
