- 1 tbsp olive oil
- 1 garlic clove, peeled
- 125g spinach, washed
- 200ml/7Âźfl oz double cream
- ground nutmeg, to taste
- salt and freshly ground black pepper
- Heat the olive oil in a frying pan over a medium heat and fry the garlic for 1-2 minutes. Add the spinach and continue to fry until the spinach has wilted. Pour in the cream and season, to taste, with nutmeg, salt and freshly ground black pepper.
- Continue to heat for 2-3 minutes, or until the volume of the liquid has reduced slightly.
- Blend the mixture together with a stick blender. Spoon into a bowl and garnish with extra grated nutmeg, to taste.
