- 2 tablespoons canola oil, divided
- 6 medium onions, thinly sliced
- 4 tablespoons all-purpose flour
- 4 cups fat free milk
- 2 cups low-sodium chicken stock
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup finely cut green onions
- Heat 1 tablespoon of canola oil in a frypan, and saute onions for about 3 minutes. Set aside.
- In a soup pot, heat 1 tablespoon canola oil, add flour and whisk together. Add LACTAID(R) Fat Free Milk, chicken stock, sauteed onions, salt and pepper and cook 15 minutes. Add green onions, stir to blend and serve.
