Crackle-Topped Apple Kuchen Recipe

  • 1 2/3 cups whole wheat flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1 cup buttermilk
  • 3/4 cup brown sugar
  • 1/4 cup canola oil
  • 2 Granny Smith apples
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  1. Preheat oven to 325 degrees F (160 degrees C). Coat a 9-inch-square (2.5-L) baking pan with nonstick spray and dust with flour.
  2. Whisk flour, baking powder, and nutmeg in a bowl. In another bowl, whisk egg until foamy. Whisk in buttermilk, brown sugar, and oil until well blended. Stir into dry ingredients until just blended. Fold in apples. Spread batter in pan.
  3. Whisk granulated sugar and cinnamon in a cup. Sprinkle mixture evenly over batter.
  4. Bake until a toothpick inserted into center comes out clean, 40 to 45 minutes. Cool kuchen in pan on wire rack, 10 to 15 minutes. Cut into 8 rectangles and wrap each in plastic wrap.
