- 1 2/3 cups whole wheat flour
- 4 teaspoons baking powder
- 1/2 teaspoon ground nutmeg
- 1 egg
- 1 cup buttermilk
- 3/4 cup brown sugar
- 1/4 cup canola oil
- 2 Granny Smith apples
- 3 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- Preheat oven to 325 degrees F (160 degrees C). Coat a 9-inch-square (2.5-L) baking pan with nonstick spray and dust with flour.
- Whisk flour, baking powder, and nutmeg in a bowl. In another bowl, whisk egg until foamy. Whisk in buttermilk, brown sugar, and oil until well blended. Stir into dry ingredients until just blended. Fold in apples. Spread batter in pan.
- Whisk granulated sugar and cinnamon in a cup. Sprinkle mixture evenly over batter.
- Bake until a toothpick inserted into center comes out clean, 40 to 45 minutes. Cool kuchen in pan on wire rack, 10 to 15 minutes. Cut into 8 rectangles and wrap each in plastic wrap.
