Corn and Bean Salsa with Avocado Recipe

  • 1 (16 ounce) package Cascadian Farm® frozen organic sweet corn, thawed and drained
  • 1 (14.5 ounce) can Muir Glen® organic diced tomatoes, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 avocado, pitted, peeled and chopped
  • 1/2 cup chopped red onions
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons red wine vinegar
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  1. Stir together all ingredients.
  2. Refrigerate until ready to serve.
