Coleslaw cucumber sticks Recipe

  • ½ cucumber, sliced in half lengthways, seeds scraped out using a teaspoon
  • 20g/¾oz apple, grated
  • 20g/¾oz carrot, grated
  • 20g/¾oz cooked beetroot, grated
  • 30g/1¼oz cream cheese
  • 15g/½oz raisins
  1. Cut the cucumber into four pieces.
  2. Mix the apple, carrot and beetroot together in a mixing bowl. Stir in the cream cheese until well combined.
  3. Fill each piece of cucumber with a little of the cream cheese mixture.
  4. Sprinkle each filled piece of cucumber with raisins. Wrap separately in cling film and chill in the fridge until needed.
