Colcannon Champ Recipe

  • 2 pounds plain or Savoy cabbage, cooked and drained
  • 2 pounds boiling potatoes, cooked and mashed
  • 1/2 cup skim milk, or as needed
  • 1 tablespoon sunflower or corn oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons chopped chives
  1. Chop well-drained cabbage or other greens coarsely. Mix with mashed potatoes.
  2. Combine in heavy saucepan and, over low heat, beat in milk, oil, butter, and salt and pepper, adjusting milk until consistency is lightly creamy. Add salt and pepper to taste.
  3. Serve very hot, sprinkled with chives.
