Colcannon Champ Recipe
- 2 pounds plain or Savoy cabbage, cooked and drained
- 2 pounds boiling potatoes, cooked and mashed
- 1/2 cup skim milk, or as needed
- 1 tablespoon sunflower or corn oil
- 1 tablespoon unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons chopped chives
- Chop well-drained cabbage or other greens coarsely. Mix with mashed potatoes.
- Combine in heavy saucepan and, over low heat, beat in milk, oil, butter, and salt and pepper, adjusting milk until consistency is lightly creamy. Add salt and pepper to taste.
- Serve very hot, sprinkled with chives.
