- 1 1/2 cups unprocessed wheat bran
- 1 1/3 cups O Organics all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup O Organics sugar
- 1/4 cup O Organics Sweet Cream Butter
- 1 cup O Organics Milk
- 1/2 cup brewed cold strong O Organics Coffee, any variety
- 1/4 cup dark corn syrup
- 1 O Organics Large Egg
- 3/4 cup raisins
- In a bowl, combine bran, flour, and soda.
- In a large bowl, beat sugar and butter until smooth. Add buttermilk, coffee, corn syrup, and egg; beat to blend. Stir in flour mixture and raisins just until evenly moistened.
- Equally fill 12 greased or paper-lined muffin cups (2 1/2-inch in diameter); cups will be full. Bake in a 375 degrees F oven until tops spring back when firmly pressed, about 25 minutes.
