Coconut rice pudding Recipe

  • 100g/3½oz butter, melted
  • 100g/3½oz rice
  • 290ml/½pt milk
  • 200g/7oz coconut milk
  • 50g/2oz caster sugar
  • drizzle double cream
  • orange segments
  1. Place all the ingredients into a pan over a medium heat and bring to the boil. Reduce the heat and simmer for 8-10 minutes, or until the rice has absorbed all the liquid.
  2. Transfer to a bowl, drizzle with cream and top with orange segments to serve.
