- 50g/1?oz butter
- 50g/1?oz caster sugar
- 50g/1?oz fresh coconut, grated
- 75g/2?oz self-raising flour
- 25g/1oz cocoa powder
- 2 free-range eggs
- 50ml/2fl oz double cream
- Preheat the oven to 200C/400F/Gas 6.
- Grease a small loaf tin with butter.
- Place the butter, sugar, grated coconut, self-raising flour, cocoa powder and eggs into a food processor and blend to make a loose dough.
- Spoon the mixture into the greased loaf tin and place in the oven to bake for six minutes, or until golden and cooked through.
- Remove from the oven and turn out onto a plate.
- To serve, cut the cake into thick slices, place on plates and drizzle with cream.
