- 150g/5½oz caster sugar
- 150g/5½oz coconut biscuits, crushed
- ½ lemon, juice only
- 1 tsp vegetable oil
- Place the caster sugar into a frying pan and melt over a medium heat until beginning to turn golden-brown.
- Add the crushed biscuits and mix well. Stir in the lemon juice.
- Grease a baking sheet with vegetable oil, then pour the mixture onto the baking sheet. Leave to cool, then chop into pieces.
