Citrus Gazpacho Recipe
- 1 large grapefruit
- 1 cup chopped cherry tomatoes
- 1 avocado, peeled and chopped
- ½ cup (119 mL) reduced-sodium tomato juice
- ½ cup (75 g) chopped red bell pepper
- ¼ cup (59 mL) reduced-sodium vegetable broth
- ¼ cup (33 g) peeled and chopped cucumber
- 2 tablespoons chopped red onion
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped fresh basil
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- Peel, section, and seed the grapefruit. Chop the sections and place them in a bowl.
- Add all the other ingredients. Gently mix. Cover the gazpacho and chill for 4 hours before serving.
