- 1 tablespoon butter
- 3 medium potatoes, peeled and cubed
- 4 yellow squash, cubed
- 4 fresh tomatoes, peeled and chopped
- 1 medium onion, chopped
- Salt and pepper to taste
- Place butter in a skillet over medium heat. Stir in potatoes, squash, tomatoes, and onion. Season with salt and pepper. Cook, stirring occasionally, until tender, about 30 minutes.
