- 4 cloves garlic
- 1 1/2 cups packed fresh cilantro leaves
- 1 1/2 cups packed fresh Italian parsley leaves
- 1/4 cup pepitas
- 1/2 cup olive oil
- 1/2 lime, juiced
- 3/4 cup grated Parmesan cheese
- Place garlic cloves in the work bowl food processor and pulse until finely chopped, 3 to 4 times. Add cilantro and parsley, and pulse until roughly chopped. Add pepitas and pulse until finely chopped. Scrape down the sides of the food processor bowl with a spatula.
- Slowly pour olive oil into the cilantro mixture with the food processor running. Transfer pesto to a bowl.
- Stir lime juice and parmesan cheese into the pesto.
