Cilantro Pesto – Cooking School Recipe

  • 4 cloves garlic
  • 1 1/2 cups packed fresh cilantro leaves
  • 1 1/2 cups packed fresh Italian parsley leaves
  • 1/4 cup pepitas
  • 1/2 cup olive oil
  • 1/2 lime, juiced
  • 3/4 cup grated Parmesan cheese
  1. Place garlic cloves in the work bowl food processor and pulse until finely chopped, 3 to 4 times. Add cilantro and parsley, and pulse until roughly chopped. Add pepitas and pulse until finely chopped. Scrape down the sides of the food processor bowl with a spatula.
  2. Slowly pour olive oil into the cilantro mixture with the food processor running. Transfer pesto to a bowl.
  3. Stir lime juice and parmesan cheese into the pesto.
