Chunky Beef Chili Recipe
- 2 teaspoons olive oil
- 1 1/2 pounds Sutton & Dodge beef chuck cut for stew
- 2 tablespoons chili powder
- 1 tablespoon cornmeal
- 1 cup water
- 2 (14.5 ounce) cans chili-ready diced tomatoes
- 1 (15 ounce) can spicy chili beans
- Heat oil in large saucepan over medium heat. Add beef and cook 8 to 10 minutes, stirring occasionally, or until very brown.
- Stir in remaining ingredients. Simmer, uncovered, 1 hour, stirring occasionally, or until beef is tender.
- Ladle chili into bowls and top with sour cream and shredded Cheddar cheese, if you like.
