- 1 ripe avocado
- 1 lime, juice only
- 3 tbsp roughly chopped chives
- 150g/5½oz cooked chorizo sausage, roughly chopped
- Scoop the avocado flesh into a mixing bowl.
- Squeeze the lime juice over the avocado to prevent it from discolouring.
- Lightly crush the avocado with a fork.
- Skin and roughly chop the chorizo.
- Roughly chop the chives and then fold everything together with the avocado and serve.
