Chopped Nutritious Salad Recipe

  • 1 (5.3 ounce) package Dannon Oikos® Yogurt 0% Plain
  • 1 tablespoon red wine vinegar
  • 1 tablespoon low fat mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • 2 romaine hearts shredded
  • 1 cup halved grape tomatoes
  • 1 cup diced seedless cucumber
  • 1/2 cup diced red pepper
  • 1/2 cup minced purple onion
  • Salt and pepper to taste
  1. In a large bowl, combine yogurt, vinegar, mayonnaise, parmesan, and parsley; mix well.
  2. Add remaining ingredients, and toss to coat. Serve immediately with croutons if desired.
