- 50g/1¾oz chocolate
- 100ml/3½fl oz double cream
- 3 free-range egg yolks
- 25g/1oz icing sugar
- splash brandy
- 50g/1¾oz hazelnuts, chopped
- fresh orange segments (optional)
- Melt the chocolate with the cream in a small pan then leave to cool for a few minutes.
- Whisk together the egg yolks and icing sugar.
- Pour this into the chocolate mixture and continue to whisk until light and fluffy.
- Stir in the brandy and hazelnuts.
- Serve in a bowl or glass and top with the orange segments, if you like.
