  • 3/4 cup heavy whipping cream
  • 6 ounces bittersweet chocolate, finely chopped
  1. Heat heavy cream in a small saucepan over medium-low heat, swirling once or twice, just until edges bubble, about 5 minutes.
  2. Place chocolate in a bowl. Pour hot cream over chocolate and whisk until smooth. Let cool to room temperature, about 30 minutes, before using.
