Chinese Chicken Salad – Developed Version Recipe

  • 1 pound cubed cooked chicken
  • 1 large head lettuce, torn into small pieces
  • 6 green onions, sliced
  • 5 stalks celery, sliced thin
  • 1 tablespoon sesame seeds, toasted
  • 1/2 cup chow mein noodles, crushed
  • 6 tablespoons seasoned rice vinegar
  • 1/4 cup SPLENDA® No Calorie Sweetener, Granulated
  • 1/2 teaspoon salt
  • 4 tablespoons peanut oil
  1. In a large salad bowl combine the chicken, lettuce, green onion, celery, sesame seeds and noodles. Mix all together. Set aside.
  2. To Make Dressing: Put vinegar in a small bowl. Dissolve SPLENDA(R) and salt in vinegar before whisking in the peanut oil.
  3. Add dressing to salad and toss to coat. Serve and enjoy!
