- 2 tbsp vegetable oil
- 2 free-range eggs
- salt and freshly ground black pepper
- ½ tsp dried chilli flakes
- 1 tbsp chopped fresh parsley
- 2 hot chapattis
- Heat the oil in a frying pan over a medium heat. Carefully break the eggs into the pan and fry for 2-3 minutes, or until cooked to your liking.
- Place the warm chapattis onto a plate and place the fried eggs on top.
- To serve, season with salt and freshly ground black pepper and sprinkle over the chilli flakes and parsley.
